Docs fixes for VitePress and Rolldown wording

Pinned VitePress to an older alpha to restore the docs language switcher, plus a small docs cleanup to use Rolldown terminology.

  • Docs wording updates: replaced references to “rollup watcher” with “Rolldown watcher” in build docs and config guidance (dogledogle6452703).
